Ingredients
- 1½ oz VIDO
- 1 oz lemon juice
- ¾ oz honey syrup*
- ½ oz pear brandy
- 2 dashes lavender bitters
- Egg white
*HONEY SYRUP
- 1 c. honey
- 1⁄2 c. water
Measure honey into the container. Heat water in a saucepan until simmering and add to the honey container. Stir until dissolved. Cool, and refrigerate. Use within 1 month. Makes approx. 8 ounces.
Preparation
- In a shaker, add all ingredients. Shake vigorously without ice to emulsify the egg white.
- Add ice and shake again until chilled.
- Fine strain into a sour glass and garnish with a dried lavender sprig.
